The outer skin is made by blending Penglai rice noodles with Zailai rice noodles. Of course, some use only Penglai rice noodles. The taste depends on the individual. There is no standard answer. Some will take a small piece of dough to boil and scald and then put it back into the dough to mix and knead. This is a little skill of their masters, and the outer skin will be more delicious. The leaves used below are also scented moon peach leaves, but other leaves are not acceptable. A vegetable bag without this scent is like losing its soul.

This traditional Hakka food has a trend of declining. Some young people may not like to eat this kind of food. Then some of the masters who will make it are also getting older. If no one passes it down, it may become rare one day. Good food.
